Hot and sour Chinese cabbage

This dish goes particularly well with plain steamed rice or Udon noodles.
Ingredients (serves 2)
1 medium/large Chinese Cabbage
1⁄2 tsp dried peppercorns
1 tbsp chopped spring onion
3 or 4 dried red chillies
1 tsp chopped garlic
2 tsp dark vinegar
3 tsp plain plant oil or oil spray
1⁄3 tsp sea salt
1⁄2 sugar (optional)
*If you do choose to add sugar for a hint of sweetness and caramelised effect, make sure to use vegan-friendly sugar, here’s a comprehensive guide from PETA about sugar.
Cooking instructions
- Prepare the main ingredients — wash the cabbage leaves then cut it into 3cm wide slices (for quicker cooking, you can soak the chopped cabbage slices in boiling water for 2–3 mins then drain out the water).
- Heat up the pan with oil in until it’s hot, add chopped spring onion, garlic, dried chillies and peppercorns*, fry for a few moments until the garlic turns golden.
- Add cabbage slices, stir well for a minute, add dark vinegar then add sugar (optional), stir well.
- Cook and stir for about 1 minute then add salt.
- Continue stir-frying for about 3 minutes then taste and adjust seasoning if necessary before serving.
- It’s not advised to eat the peppercorns , so you can remove them from the pan before adding the cabbage slices.
